Double Mushroom Burgers

Ingredients
1 egg
Salt & pepper
1-2 cloves garlic
½ red onion
1 tablespoon fresh thyme leaves
8 Large portabella mushrooms
250g pork mince/ chicken mince/beef
Olive oil
1 ½ tablespoon of coconut aminos

Method
In a large bowl, whisk the egg, coconut aminos and seasoning together. Crush the garlic, finely dice the onion and add to the bowl. Roughly chop the thyme leaves and mix through.
Remove the stalks from the mushrooms, drizzle the mushroom caps with a little olive oil on the both sides and set aside. Dice the stalks finely and add to the egg mixture.
Add the mince and mix well to combine. Separate the mixture into quarters and shape into patties with your hands.
Heat a frying pan and, when hot, put the meat patties on and cook for 3-4 minutes each side.
Assemble the burger using the mushrooms as buns. Fill as you normally would with burger goodies: lettuce, tomatoes, avocado.
