Granola
Ingredients
1 cup almonds, whole or slivered
1 cup pecans, roughly chopped
1 cup walnuts, roughly chopped
1/2 cup sunflower seeds, raw
1/2 cup pumpkin seeds, raw
2 tablespoons chia seeds
2 tablespoons
flax seeds, ground
1 tablespoon maple syrup, pure (or use raw honey)
1/2 teaspoon cinnamon
1 cup raisins
1 cup goji berries
1 cup almond milk, unsweetened, or coconut milk, to serve
Preparations
1 Preheat oven to 275 F.
2 In a large mixing bowl, combine almonds, pecans, walnuts, sunflower seeds, pumpkin seeds, chia, flax, coconut oil, maple syrup and cinnamon. Stir with a wooden spoon to coat.
3 Spread mixture evenly on a rimmed baking sheet. Bake, stirring twice, for 20 minutes.
4 Remove from oven and cool 5 minutes. Add raisins and Goji berries and stir to combine.
5 Serve warm or room temperature with almond or coconut milk.
6 To store, cool granola completely and keep in an airtight container at room temperature.
